How the calculator works

Every number starts from our authentic Thai iced tea recipe, which we tested side by side against Bangkok street stalls: per tall glass, about 2 tablespoons (12 g) of Thai tea mix, 240 ml of hot water, 1 tablespoon of sugar, 1½ tablespoons of sweetened condensed milk and 1 tablespoon of evaporated milk floated on top.

Tips for big batches

For more than about eight glasses, brew a concentrate: steep the mix and sugar in the water, strain, stir in the condensed milk while it is hot, then chill. Strained concentrate keeps for several days in the fridge without getting harsher. Pour over ice and float the evaporated milk per glass when you serve.

Use a large filter sock or a fine sieve lined with cloth — fine Thai tea mix clogs paper filters. If the result tastes thin, see why Thai tea comes out weak.
